Ingredients
  

  • 1 whole chicken, cut into 8 pieces
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cloves of garlic, minced
  • 1 tablespoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 8 cups of chicken broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Method
 

  1. In a large pot or Dutch oven, place the chicken pieces and cover with the chicken broth.
  2. Add the onion, carrots, celery, garlic, oregano, thyme, and bay leaf.
  3. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 45 minutes to 1 hour, or until the chicken is cooked through and tender.
  4. Remove the chicken pieces from the pot and set them aside.
  5. Using a slotted spoon, remove the vegetables from the broth and set them aside as well.
  6. Shred the chicken meat off the bones and return it to the broth.
  7. Add the reserved vegetables back to the pot and season with salt and pepper to taste.
  8. Serve the Sicilian Chicken Soup hot, garnished with chopped parsley.

Notes

For best results, simmer the chicken and broth separately to extract maximum flavor. Cook the vegetables until tender but still maintain their structure.
