Method
 

  1. Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side, until browned.
  2. Prepare the Sauce: In the same skillet, add the minced garlic and cook for 30 seconds, until fragrant. Add the chicken broth, heavy cream, Parmesan cheese, butter, Dijon mustard, lemon juice, Italian herbs, salt, and pepper. Whisk until the cheese is melted and the sauce is smooth.
  3. Slow Cook: Pour the sauce into the slow cooker. Place the seared pork chops in the sauce, ensuring they are mostly submerged.
  4. Cook: Cover and cook on low for 4-6 hours, or on high for 2-3 hours, or until the pork chops are fork-tender and reach an internal temperature of 145°F (63°C).
  5. Garnish and Serve: Remove the pork chops from the slow cooker. Spoon the sauce over the chops and garnish with fresh parsley and extra Parmesan cheese. Serve immediately with your favorite sides, such as mashed potatoes, rice, or roasted vegetables.
