- Place the chicken breasts in the bottom of a crockpot.
- In a medium bowl, mix together the pineapple chunks (with juice), barbecue sauce, brown sugar, garlic powder, and onion powder.
- Pour the pineapple BBQ sauce mixture over the chicken, making sure the chicken is fully covered.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once the cooking time is up, shred the chicken using two forks.
- Serve the shredded Crockpot Pineapple BBQ Chicken over rice, on buns, or with your favorite sides.
Notes
For best results, use boneless, skinless chicken breasts. The slow-cooking process in the crockpot allows the chicken to become incredibly tender and shredable. The perfect balance of pineapple and barbecue sauce creates a unique and delicious flavor profile. Adjust the amount of barbecue sauce or brown sugar to your desired sweetness level. This dish can be stored in the refrigerator for up to 4 days and reheated before serving.
