Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 6 tablespoons unsalted butter, chilled and cubed
  • 3/4 cup cold buttermilk
  • 1 pound thinly sliced roast beef
  • 1 cup beef broth
  • 4 slices provolone cheese

Equipment

  • large mixing bowl
  • Pastry cutter or fingers
  • baking sheet
  • parchment paper
  • small saucepan

Method

  1. Preheat your oven to 450°F (230°C).
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Cut the chilled butter into the dry ingredients using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. Gently stir in the cold buttermilk until the dough just comes together.
  5. Turn the dough out onto a lightly floured surface and knead it briefly, about 4-5 times.
  6. Roll or pat the dough into a 1/2-inch thick rectangle.
  7. Cut the dough into 4 equal squares and place them on a baking sheet lined with parchment paper.
  8. Bake the biscuits for 12-15 minutes, or until they are golden brown.
  9. While the biscuits are baking, warm the beef broth in a small saucepan.
  10. Slice the baked biscuits in half horizontally and place a slice of provolone cheese on the bottom half.
  11. Top the cheese with a generous portion of thinly sliced roast beef.
  12. Dip the top half of the biscuit into the warm beef broth and place it on top of the roast beef.

Notes

For best results, handle the dough gently to achieve a flaky texture. The key to the perfect flavor is dipping the top half of the biscuit into the warm beef broth. Serve the Baked French Dip Biscuits immediately for maximum enjoyment.
