Ingredients
  

  • 6 bell peppers any color
  • 1 lb ground beef or ground turkey
  • 1 cup cooked rice
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheddar or mozzarella cheese

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  3. In a large skillet, cook the ground beef or turkey over medium heat until browned and crumbled. Drain any excess fat.
  4. Add the diced onion and minced garlic to the skillet. Cook for 2-3 minutes until the onion is translucent.
  5. Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Mix well.
  6. Spoon the filling into the hollowed-out bell peppers, packing it in firmly.
  7. Top each stuffed pepper with shredded cheese.
  8. Bake for 30-35 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Serve hot and enjoy!

Notes

For a healthier option, you can use ground turkey instead of ground beef. Additionally, you can experiment with different cheese varieties or add in additional vegetables to the filling, such as spinach or mushrooms.
