- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain any excess fat.
- Add the taco seasoning and tomato sauce to the skillet, stirring to combine. Simmer for 5 minutes.
- In a large mixing bowl, combine the seasoned ground beef, black beans, and corn.
- Grease a 9x13 inch baking dish. Arrange a layer of the tortilla quarters in the bottom of the dish.
- Spread half of the beef and bean mixture over the tortillas, followed by half of the cheddar and Monterey Jack cheeses.
- Repeat the layers, ending with the remaining cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to cool for 5-10 minutes before serving.
