Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 8 oz shredded cheddar cheese
  • 8 oz shredded Monterey Jack cheese
  • 8 corn tortillas, cut into quarters

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain any excess fat.
  3. Add the taco seasoning and tomato sauce to the skillet, stirring to combine. Simmer for 5 minutes.
  4. In a large mixing bowl, combine the seasoned ground beef, black beans, and corn.
  5. Grease a 9x13 inch baking dish. Arrange a layer of the tortilla quarters in the bottom of the dish.
  6. Spread half of the beef and bean mixture over the tortillas, followed by half of the cheddar and Monterey Jack cheeses.
  7. Repeat the layers, ending with the remaining cheese.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Allow the casserole to cool for 5-10 minutes before serving.

Notes

For best results, use a blend of cheddar and Monterey Jack cheeses to achieve the perfect melty, gooey, and flavor-packed topping. The tortilla quarters provide a sturdy base that soaks up the flavors of the beef and bean mixture. Adjust the seasoning to your personal taste preferences.
