- Preheat your oven to 375°F (190°C).
- In a medium bowl, combine the chopped spinach, ricotta, Parmesan, garlic, oregano, salt, and pepper. Mix well until fully incorporated.
- Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach mixture, dividing it evenly.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Remove the dish from the oven and let the chicken rest for 5 minutes before serving.
Notes
For best results, be sure to strike the right balance of moisture between the chicken and the spinach filling. Baking the stuffed chicken at a slightly lower temperature for a longer duration ensures the chicken remains juicy and the filling stays intact.
