Method
- Preheat your oven to 400°F (200°C).
- Place the jalapeno peppers on a baking sheet and roast them for 20-25 minutes, turning occasionally, until they are charred and softened.
- Remove the roasted jalapenos from the oven and allow them to cool for a few minutes. Once they are cool enough to handle, peel off the skins and slice them into thin strips.
- In a medium bowl, combine the shredded cheddar and Monterey Jack cheeses.
- Spread the softened butter on one side of each slice of bread.
- Place four slices of bread, butter-side down, on a flat surface. Divide the cheese mixture evenly among the four slices, then top with the roasted jalapeno strips.
- Place the remaining four slices of bread, butter-side up, on top of the cheese and jalapeno mixture.
- Heat a large skillet or griddle over medium heat. Cook the sandwiches for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
