  • 1 lb Yukon Gold potatoes, diced
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  3. Season the chicken thighs with salt, black pepper, oregano, and thyme.
  4. Add the chicken to the hot skillet and sear for 3-4 minutes per side, or until golden brown.
  5. Remove the chicken from the skillet and set it aside.
  6. Add the diced potatoes to the skillet and sauté for 5-7 minutes, or until they start to soften.
  7. Sprinkle the minced garlic over the potatoes and sauté for an additional 2 minutes, or until fragrant.
  8. Return the seared chicken thighs to the skillet, nestling them into the potatoes.
  9. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
  10. Remove the skillet from the oven and sprinkle the grated Parmesan cheese over the top.
  11. Broil for 2-3 minutes, or until the cheese is melted and golden brown.
  12. Serve hot and enjoy!

Notes

For best results, use bone-in, skin-on chicken thighs for extra juiciness and flavor. You can also experiment with different herbs and spices to customize the seasoning to your taste. This dish is great for meal prepping and can be stored in the refrigerator for up to 3 days.
