  • 2 cups beef or chicken broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz lasagna noodles, broken into 1-inch pieces
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Press the "Sauté" function on your Instant Pot and add the ground beef or sausage. Cook, breaking it up with a wooden spoon, until browned, about 5-7 minutes.
  2. Add the onion and garlic to the pot and cook for an additional 2-3 minutes, until fragrant.
  3. Pour in the crushed tomatoes, broth, water, tomato paste, oregano, basil, salt, and pepper. Stir to combine.
  4. Add the broken lasagna noodles to the pot and stir to submerge them in the liquid.
  5. Secure the lid on the Instant Pot and set the valve to the "Sealing" position. Cook on high pressure for 10 minutes.
  6. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then do a quick release.
  7. Stir in the mozzarella and Parmesan cheeses until melted and well combined.
  8. Serve hot, garnished with additional cheese, fresh basil, or crushed red pepper flakes, if desired.
