  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1 tbsp lemon juice

Method
 

  1. Prepare the Chicken: Pat the chicken cubes dry with paper towels.
  2. Season the Chicken: In a bowl, toss the chicken with olive oil, salt, pepper, and red pepper flakes (if using). Ensure the chicken is evenly coated.
  3. Sear the Chicken: Heat a large skillet over medium-high heat. Add the chicken in a single layer, avoiding overcrowding. Sear for 2-3 minutes per side, until golden brown and cooked through. Chicken should reach an internal temperature of 165°F (74°C). Work in batches if necessary.
  4. Make the Garlic Butter: Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 1 minute, or until fragrant, being careful not to burn it.
  5. Combine and Simmer: Add the seared chicken back to the skillet with the garlic butter. Toss to coat evenly. Stir in the lemon juice and chopped parsley. Cook for another minute, allowing the flavors to meld together.
  6. Serve Immediately: Serve the garlic butter chicken bites hot, garnished with extra parsley, if desired.

Notes

For best results, use a cast iron skillet to sear the chicken. Be careful not to burn the garlic. Serve immediately over rice, pasta, or on their own. Store leftovers in an airtight container in the refrigerator for up to 3 days. For a spicier kick, increase the amount of red pepper flakes. A squeeze of lemon zest can be added for extra bright flavor.
