  • 3-4 lbs boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup chicken broth
  • Juice of 1 lime
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Method
 

  1. Place the chicken breasts in the bottom of a large crock pot.
  2. In a bowl, combine the taco seasoning, black beans, corn, diced tomatoes, salsa, chicken broth, lime juice, garlic powder, and cumin. Stir to mix well.
  3. Pour the mixture over the chicken in the crock pot, making sure the chicken is fully submerged.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
  5. Shred the chicken using two forks and stir it back into the sauce.
