Ingredients

  • 6 boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes optional
  • Salt and pepper to taste

Equipment

  • Slow cooker
  • mixing bowl
  • whisk
  • Forks

Method

  1. Place the chicken thighs in a slow cooker.
  2. In a small bowl, whisk together the honey, soy sauce, garlic, oregano, and red pepper flakes (if using). Pour the mixture over the chicken, making sure the thighs are evenly coated.
  3. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.
  4. Remove the chicken from the slow cooker and shred it using two forks.
  5. Return the shredded chicken to the slow cooker and stir to coat it in the honey garlic sauce.
  6. Serve the Slow Cooker Honey Garlic Chicken over steamed rice, mashed potatoes, or your favorite sides.

Notes

For best results, cook the chicken on low for 6-8 hours or on high for 3-4 hours. The low and slow cooking time allows the chicken to become incredibly tender, while the honey and garlic create a delicious glaze. You can adjust the amount of red pepper flakes to your desired level of spiciness. This dish pairs well with various side dishes, such as garlic parmesan chicken and potatoes, creamy garlic parmesan crockpot chicken and potatoes, or crockpot teriyaki chicken.
