Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1/2 tsp black pepper
  • 1 lb Lo Mein noodles or spaghetti
  • 4 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 1/4 tsp red pepper flakes optional
  • 2 green onions, thinly sliced
  • Sesame seeds
  • 2 tbsp vegetable oil

Method
 

  1. Prepare the Chicken: In a bowl, combine the chicken pieces with 1 tbsp soy sauce, cornstarch, and black pepper. Mix well and set aside for at least 15 minutes.
  2. Cook the Noodles: Cook the Lo Mein noodles according to package directions. Drain and set aside. If using spaghetti, cook al dente.
  3. Make the Sauce: In a small bowl, whisk together 4 tbsp soy sauce, honey, rice vinegar, sesame oil, cornstarch, and chicken broth. Set aside.
  4. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  5. Sauté the Aromatics: Add another tablespoon of vegetable oil to the skillet. Add the minced garlic and ginger, and cook until fragrant, about 30 seconds. Be careful not to burn the garlic. Add red pepper flakes, if using.
  6. Add the Sauce: Pour the sauce into the skillet and bring to a simmer. Cook for 2-3 minutes, or until the sauce has thickened and become glossy.
  7. Combine Everything: Add the cooked chicken and noodles to the skillet. Toss to coat everything evenly with the sauce.
  8. Garnish and Serve: Garnish with sliced green onions and sesame seeds. Serve immediately and enjoy!

Notes

Marinating the chicken tenderizes it and infuses it with flavor. Cook noodles al dente to prevent sogginess. Be careful not to burn the garlic while sauteing, use medium heat and stir constantly. Serve immediately as the noodles will absorb the sauce over time. For a richer flavor, use fresh Lo Mein noodles.
