- Prepare the Sauce: In a small bowl, whisk together soy sauce, honey, cornstarch, rice vinegar, and sesame oil until smooth. Set aside.
- Cook the Turkey: Heat sesame oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through. Season with garlic powder, ground ginger, and red pepper flakes (if using). Remove turkey from skillet and set aside.
- Cook the Vegetables: Add onion and bell peppers to the skillet and cook, stirring occasionally, until softened, about 5-7 minutes. Add water chestnuts and cook for another minute.
- Combine and Simmer: Return cooked turkey to the skillet with the vegetables. Pour the sauce over the mixture and bring to a simmer, stirring constantly. Cook until the sauce has thickened, about 1-2 minutes.
- Garnish and Serve: Remove from heat and garnish with green onions. Serve over cooked rice.
Notes
For a spicier dish, add more red pepper flakes or a dash of sriracha to the sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can substitute ground chicken or beef for the ground turkey. For a vegetarian option, use tofu instead of meat.
