  • 8 oz. Chinese egg noodles
  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers
  • 1 cup thinly sliced cabbage
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Method
 

  1. Bring a large pot of water to a boil. Cook the egg noodles according to package instructions, then drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over high heat. Add the chicken and stir-fry until no longer pink, about 5-7 minutes.
  3. Add the garlic and ginger to the skillet and cook for 1 minute, until fragrant.
  4. Toss in the mushrooms, bell peppers, and cabbage. Stir-fry for 3-4 minutes, until the vegetables are tender-crisp.
  5. Add the cooked noodles, soy sauce, rice vinegar, and sesame oil to the skillet. Toss everything together until well combined and heated through.
  6. Season with salt and pepper to taste.
