  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked rice white or brown
  • 1 cup corn kernels fresh, frozen, or canned
  • 1/2 cup salsa
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream or Greek yogurt
  • 1 avocado, diced
  • Chopped cilantro, for garnish
  • Lime wedges, for serving

Method
 

  1. Prepare the rice according to package directions or your preferred method.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add the chicken to the skillet and season with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  4. Cook the chicken until it is cooked through and lightly browned, about 5-7 minutes.
  5. Assemble the burrito bowls by dividing the rice, black beans, corn, and seasoned chicken evenly among four bowls.
  6. Top with salsa, cheddar cheese, sour cream or Greek yogurt, avocado, and cilantro.
  7. Serve with lime wedges.

Notes

Feel free to customize your burrito bowl with your favorite toppings, such as guacamole, pico de gallo, or pickled onions. For a spicier bowl, add a pinch of cayenne pepper to the chicken seasoning. Leftovers can be stored in the refrigerator for up to 3 days.
