- Prepare the rice according to package directions or your preferred method.
- In a large skillet, heat olive oil over medium-high heat.
- Add the chicken to the skillet and season with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Cook the chicken until it is cooked through and lightly browned, about 5-7 minutes.
- Assemble the burrito bowls by dividing the rice, black beans, corn, and seasoned chicken evenly among four bowls.
- Top with salsa, cheddar cheese, sour cream or Greek yogurt, avocado, and cilantro.
- Serve with lime wedges.
Notes
Feel free to customize your burrito bowl with your favorite toppings, such as guacamole, pico de gallo, or pickled onions. For a spicier bowl, add a pinch of cayenne pepper to the chicken seasoning. Leftovers can be stored in the refrigerator for up to 3 days.
