Ingredients

  • 1 pound kielbasa, sliced into 1/2-inch rounds
  • 1 medium onion, sliced
  • 1 bell pepper any color
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • Salt to taste
  • Pepper to taste
  • 1/4 cup grated Parmesan cheese, for serving
  • Fresh parsley, chopped for garnish

Equipment

  • Blackstone griddle
  • spatula
  • Large bowl
  • Serving dish
  • knife
  • cutting board

Method

  1. Preheat your Blackstone griddle to medium-high heat.
  2. Drizzle olive oil onto the griddle. Add the sliced onions and bell peppers.
  3. Cook, stirring occasionally, until softened and slightly caramelized, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Push the vegetables to one side of the griddle. Add the sliced kielbasa to the other side.
  5. Cook, flipping occasionally, until browned and slightly crispy, about 5-7 minutes.
  6. Add the tortellini to the griddle with the vegetables and kielbasa. Toss everything together to combine.
  7. Cook, stirring frequently, until the tortellini is heated through and slightly browned, about 5-7 minutes.
  8. Sprinkle with Italian seasoning, red pepper flakes (if using), salt, and pepper. Toss to coat evenly.
  9. Remove from the griddle and transfer to a serving dish.
  10. Garnish with grated Parmesan cheese and fresh parsley. Serve immediately.

Notes

For best results, avoid overcrowding the griddle. Cook in batches if necessary. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can substitute different types of sausage or pasta depending on your preference. For a vegetarian option, omit the kielbasa and add mushrooms or other vegetables.
