Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1/2 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup beef broth

Equipment

  • Crockpot
  • Large bowl
  • Slotted spoon

Method

  1. In a large bowl, combine the softened butter, minced garlic, oregano, basil, salt, and pepper. Mix well until fully incorporated.
  2. Add the beef cubes to the bowl and toss to coat them evenly with the garlic butter mixture.
  3. Transfer the coated beef cubes to a Crockpot and pour the beef broth over the top.
  4. Cover the Crockpot and cook on low for 6-8 hours, or until the beef is tender and easily shreds with a fork.
  5. Once cooked, use a slotted spoon to transfer the beef bites to a serving dish. Spoon some of the cooking liquid over the top to keep the bites moist.
  6. Serve hot, garnished with chopped fresh parsley if desired.

Notes

The key to success is in the interplay of slow cooking, seasoning, and the unique properties of the beef. The garlic butter coating helps to keep the meat moist and infused with flavor throughout the cooking process. For best results, use a Crockpot and cook on low for 6-8 hours.
