  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/2 teaspoon red pepper flakes optional
  • 4 cups broccoli florets
  • Cooked rice, for serving

Method
 

  1. In a large Crock Pot, combine the beef, beef broth, soy sauce, brown sugar, rice vinegar, cornstarch, garlic, ginger, and red pepper flakes (if using).
  2. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  3. During the last 30 minutes of cooking, add the broccoli florets to the Crock Pot. Cover and continue cooking until the broccoli is tender but still crisp.
  4. Serve the Crock Pot Beef and Broccoli over cooked rice, and enjoy!
