Ingredients
  

  • 1 lb potato gnocchi
  • 6 slices of bacon, diced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 3 cups of chicken or vegetable broth
  • 2 cups of heavy cream
  • 2 cups of shredded cheddar cheese
  • 1 tsp of dried thyme
  • Salt and pepper to taste

Method
 

  1. In a large pot, cook the diced bacon over medium heat until crispy. Remove the bacon from the pot, leaving the bacon fat behind.

  3. Stir in the minced garlic and cook for an additional minute, until fragrant.
  4. Pour in the broth and heavy cream, and bring the mixture to a simmer.
  5. Add the gnocchi and cook for 5-7 minutes, until the gnocchi are tender.
  6. Reduce the heat to low and stir in the shredded cheddar cheese until melted and well combined.
  7. Season with dried thyme, salt, and pepper to taste.
