  • 3-4 lbs beef chuck roast, cut into 1-inch cubes
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 8-10 hoagie or French rolls, split lengthwise
  • Provolone or Swiss cheese, sliced optional

Method
 

  1. Place the beef, onion, and garlic in a slow cooker.
  2. In a bowl, whisk together the beef broth, soy sauce, Worcestershire sauce, thyme, and black pepper. Pour the mixture over the beef.
  3. Cover and cook on low for 7-8 hours, or on high for 4-5 hours, until the beef is very tender.
  4. Using a slotted spoon, transfer the beef to a cutting board and shred or slice it.
  5. Ladle some of the cooking liquid into small bowls for dipping.
  6. Place the shredded beef on the bottom half of the rolls, and top with cheese if desired.
  7. Serve the sandwiches with the reserved cooking liquid for dipping.
