- Prepare the Dough: In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat, stirring until the butter is melted.
- Add Flour: Remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until a smooth dough forms and pulls away from the sides of the pan.
- Incorporate Eggs: Transfer the dough to a mixing bowl. Let it cool for a few minutes. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. The dough should be thick but pipeable.
- Prepare for Air Frying: Transfer the dough to a piping bag fitted with a large star tip. Preheat your air fryer to 375°F (190°C). Spray the air fryer basket with vegetable oil spray.
- Pipe the Churro Bites: Pipe 1-inch pieces of dough into the air fryer basket, leaving some space between each bite. You may need to work in batches.
- Air Fry: Air fry for 8-10 minutes, or until golden brown and crispy.
- Coat with Cinnamon Sugar: While the churro bites are air frying, combine the sugar and cinnamon in a shallow dish.
- Coat and Serve: Immediately after removing the churro bites from the air fryer, toss them in the cinnamon sugar mixture until evenly coated. Serve warm and enjoy!
Notes
Ensure the air fryer is preheated for best results. Do not overcrowd the air fryer basket. Store leftover churro bites in an airtight container at room temperature. They are best enjoyed fresh. For a richer flavor, try adding a dash of vanilla extract to the dough.
