Amazing Dutch Oven Tortellini Soup with Sausage

Ingredients
  

  • 1 pound Italian sausage sweet or hot, or a mix
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 9 ounces fresh or frozen cheese tortellini
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage from the Dutch oven and set aside.
  3. Add onion, carrots, and celery to the Dutch oven and cook until softened, about 5-7 minutes.
  4. Add garlic, oregano, basil, and red pepper flakes (if using) and cook for 1 minute more, until fragrant.
  5. Pour in chicken broth and diced tomatoes. Bring to a simmer, scraping up any browned bits from the bottom of the Dutch oven.
  6. Return the sausage to the Dutch oven.
  7. Reduce heat to low, cover, and simmer for at least 30 minutes, or up to an hour, to allow flavors to meld.
  8. Stir in heavy cream and bring back to a gentle simmer.
  9. Add tortellini and cook according to package directions, usually about 3-5 minutes, or until tender.
  10. Season with salt and pepper to taste.
  11. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use bone-in sausage. Simmering the soup longer enhances the depth of flavor. Add the tortellini at the very end to prevent overcooking. Store leftovers in an airtight container in the refrigerator for up to 3 days. You can substitute other types of pasta for tortellini, but adjust the cooking time accordingly. For a spicier soup, use hot Italian sausage and add more red pepper flakes. You may also use half-and-half instead of heavy cream for a less rich flavor.
